Earlier
this year I met with Dr. Magnus who introduced me to his process of removing
the shell from the raw macadamia nut and then cooking the nut for 72 hours
using only slightly hot air. The
result is a macadamia nut full of all the complex poly-nutrients and a
taste that is outrageously fresh, buttery, and delicious.
When Dr. Magnus described the new cracking technology recently developed
on Hawaii Island that takes
advantage of the resonant frequency of the shell. I had to learn more.

Traditional
commercial processors use crackers that crush the nut between rollers
or blades. Commercial nuts are cooked twice. First, until dry in the shell
prior to cracking to shrink the nut so the cracking is made faster and
then cooked once more after that. The result is a good tasting nutrient
poor nut. In
addition drying in the shell tends to import 'woody' flavor of the shell
in to the kernel.

Penn
State Researchers a found that macadamia nuts contain palmitoleic
acid, which may improve metabolism and reduce fatty tissues around the
heart and liver.
Comprehensive
studies 26,000 men 86,000 women indicate that eating nuts significantly
reduces the risk of fatal and nonfatal heart attacks. Nearly a dozen controlled
trials have shown that adding nuts to the diets of volunteers lowered
total serum cholesterol levels as well as LDL levels.

| Macadamia
nuts have the highest percentage of monounsaturated fat in their oil. Eighty
percent of the oil in macadamia nuts is mono-unsaturated. In comparison,
olive oil is 76 percent monounsaturated.
